I tried to take more pictures of preserved garden veggies that I ate this week. This is a typical lunch sandwich with sweet potato hummus, lettuce from the garden, roasted red peppers and dried tomatoes out of the freezer. That is also my homemade whole wheat bread. I think it is the most delicious 100% whole wheat bread recipe that I've tried.
One night this week we had quesadillas with lots of frozen garden veggies: corn, green peppers, banana peppers and tomatoes. The onions were store bought- it seems I can never grow enough onions.
These are my typical breakfasts: some kind of greens with egg. The first one is Swiss chard and carrots. The second one is spinach with roasted tomato sauce. That sauce tastes so much of summer- perfect for brightening a February breakfast.
Weekly harvests:
Carrots: 6.3 oz
Broccoli: 1.3 oz
Spinach: 4.4 oz
Lettuce: 2 oz
2016 Harvests: 25.7 lbs

Yum, yum and yum! I never think of adding greens to my breakfasts - they look delicious! That sandwich looks amazing too - that's a great idea making hummus from sweet potatoes. Now if I could only grow more than one meals worth!
ReplyDeleteI imagine it is hard to grow sweet potatoes so far north. They seem to take a very long time to mature. I plant mine in May and don't harvest until October.

DeleteSweet potato hummus? That sounds yummy! Do you have a favorite recipe you make? I'm with you on the KA 100% whole wheat bread. It is my favorite for 100% WW too. I love greens with eggs too, and they almost always wind up in an omelet or frittata. Your meals are making me hungry, even after I've eaten dinner!

DeleteI think the trade off with the long growing season here is so many bugs and such a diversity of pests. Plus they have time to have multiple generations each season, so it's a constant battle.
